ΓΑΣΤΡΟΝΟΜΙΑ Αυγοτάραχο

Greek bottarga

Avgotaraho, also known as the "caviar of the Ambracian Gulf," is produced from the roe of grey mullet and is a delicacy of exceptional quality.
The roe of the female grey mullet, or "bafa" as it's called in the region, is processed with salt and then submerged in natural beeswax to preserve it. It has a distinctive flavor and is a side dish to accompany ouzo, served in small slices. It is perhaps the most expensive Greek-produced delicacy, with a cost of about 150.00 euros per kilogram.

Sardine (Papalina)

The famous Preveza sardine (which is honored every August at the sardine festival) is a trademark of the region.

Gambari, the Ambracian Gulf Shrimp

Another delicacy representative of the area is the famous shrimp, or gambari, whose flavor is unique on a global level.

Olive Oil

The soil of the mainland is suitable for many types of crops, such as olive groves that produce excellent quality oil, and vegetables like tomatoes and potatoes, as well as many aromatic plants.

Wine, Ouzo and Tsipouro

In the more mountainous areas of the Preveza regional unit, vineyards are cultivated that produce very good quality wine, as well as many liqueurs like ouzo and tsipouro.

Kranada
